When the days grow longer and the weather turns balmy, there’s nothing quite like heading outdoors to enjoy an al fresco dinner as dusk settles over the landscape like a hush. At Douglas Green we’re all about embracing the singular pleasures of summer and spring, so we’ve rustled up a few fuss-free dinner ideas that you can be enjoyed al fresco when the mercury starts to rise.

Mediterranean Fish Parcels
Combine firm-fleshed white fish fillets (hake or cod will do nicely), with tinned tomatoes, olives, thinly sliced courgettes, mushrooms and green pepper in a foil packet and pop it on a grid over warm coals for 30 – 45 minutes.
